I went to the grocery store today. We were almost out of milk anyways, so I went to my favorite big chain supermarket to look for some healthy goodies for this crazy thing called love...I mean food. Synonymous, right? Anyhoo...
I found some pretty neat stuff that I'm going to put through its paces. I also discovered that one of my favorite foods is PCOS-friendly: SHRIMP! Heck yeah! I love me some little pink sea cockroaches. My youngest loves them, too. We also both like to eat them sans breading. Give us broiled, boiled or scampi'd or in a yummy pasta or Chinese food meal.
Problem: What about the butter that goes with all that yummy-yum? Especially since scampi is one of the easiest ways to cook shrimp when I can't grill them up until they scream for their mamas.
Enter the recipe of the day:
Butter-less Shrimp Scampi (Seriously!)
I found a few recipes that cook shrimp using olive oil. I thought: Why can't I use that instead of butter? Answer: I CAN! I also made some great long-grain rice with organic low-sodium chicken broth and some steamed veggies in the microwave (Yes mom, you were right - the microwave is awesome).
Recipe (for 9 medium deveined/shelled raw shrimp -- approx. 1/2 lb)
1/4 medium yellow onion, minced
2 tbsp garlic, minced
1 tbsp light olive oil
1/2 tsp fresh rosemary
1/4 C chicken broth
Juice of 1/2 a lemon
Salt and pepper to taste
Heat saute pan on medium with olive oil. Add garlic and onion. Saute until the onion starts to become slightly transparent. Add rosemary and chicken broth. Heat for about 3 min until the broth heats up. Add shrimp and stir. When the shrimp starts to turn pink, flip it over in the pan and add the lemon juice. Cook until both sides are pink and the tails turn reddish-pink (approx 5-6 min). Salt and pepper to taste, garnish with a lemon wedge.
I added a bit more chicken broth to make a soupy-sauce which I put on my rice. It was heavenly and the hubbs is gone so I don't have to worry about kissing anyone except X and she's got worse garlic breath than me!

So, I brought home a bag of stuff to try. I also did a short walk with the happy puppy who loves when there is no one at the park and I let her run free.
Starts singing: Booooooorn Free! As Free as the Wind blows....
Someday, I'll run like she does, all wild and happy. Hopefully with a lot less drool and ear flapping, though.

The expression "Mom knows best" must be true! Changing ones diet is never easy, been there, done that, don't want to have to do it again! It will become easier once you start feeling better. Hang in there! You have a lot of support and people that love you!
